Alternative to fresh and frozen egg. Ideal for any meringue based products. Easy to use. Improves whipping qualities and brightness of product.
Meri-White is considered to be the professionals choice when it comes to all royal icing and meringue work. Colour and flavour may be added if desired.
Meri-White is instantly water soluble and requires no special storage.
Wheat starch, dried egg albumen, sugar, modified starch, acidity regulators (calcium lactate, tartaric acid, cream of tartar, lactic acid), dextrose, stabiliser (guar gum)
How to use:
- dissolve 75g Meri-White in 500ml cold water and place in a grease free mixing bowl
- whisk on high speed whilst adding 1kg granulated sugar
- continue whisking until you reach full peaks
- dissolve 75g Meri White in 500ml cold water and place in grease free mixing bowl
- gradually add 3 kg icing suagr on slow speed beating until you reach a firm peak
