Alternative to fresh and frozen egg. Ideal for any meringue based products. Easy to use. Improves whipping qualities and brightness of product.

Meri-White is considered to be the professionals choice when it comes to all royal icing and meringue work. Colour and flavour may be added if desired.

Meri-White is instantly water soluble and requires no special storage.

Ingredients:

Wheat starch, dried egg albumen, sugar, modified starch, acidity regulators (calcium lactate, tartaric acid, cream of tartar, lactic acid), dextrose, stabiliser (guar gum)

How to use:

Meringues:

  • dissolve 75g Meri-White in 500ml cold water and place in a grease free mixing bowl
  • whisk on high speed whilst adding 1kg granulated sugar
  • continue whisking until you reach full peaks

Royal Icing:

  • dissolve 75g Meri White in 500ml cold water and place in grease free mixing bowl
  • gradually add 3 kg icing suagr on slow speed beating until you reach a firm peak
